Barrio Fiesta Themed Dinner at Allegro Restaurant and Bar

On our last night at Maribago Bluewater, we had dinner again at the Allegro, but this time, it is a themed dinner called “Barrio Fiesta”. A fiesta or a feast is a tradition that usually involves street dancing, parade and food festivities which Filipinos inherited from the Spaniards. Usually, fiestas are of religious nature. It is a Filipiniana way of partying.
The  Barrio Fiesta themed  dinner at Allegro includes no other than the famous Cebu Lechon. 
Lechon in Cebu is so tasty and tender. It is the best lechon I have tasted so far. It does not have “sarsa” or sauce because the meat itself is generously seasoned with herbs and spices. If you wish to bring some home, you can go to CNT Lechon near SM Cebu. They will pack it in such a way that it will be allowed aboard the plane.
Bibingka (rice cake) is made of rice flour, red and white eggs, butter and sugar. It is usually available during the yuletide season or during Simbang Gabi. Allegro’s bibingka are in bite-sizes. 
The buffet also includes yema or candies made of caramelized condensed milk.
They also have sorbetes or home-made ice cream (ube, keso and chocolate flavor). You can also request for halo-halo (caramelized fruits with crushed ice, ube, leche flan and milk). 
The themed dinner also includes a cultural show showcasing Filipino songs and folk dances.

Sugba Lunch at Allegro Restaurant and Bar, Maribago Bluewater

Cebu is also famous for Sugba, or their rendition of grilling. On our last day in Maribago Bluewater, we had the chance to try their own version of Sugba or sinugba.
For appetizer, we chose Ensaladang Talbos ng Kamote, a sweet potato salad with crispy anchovies and native vinaigrette. This is a good alternative to the usual Caesar Salad.

Allegro Restaurant and Bar lets you choose a cut (fish, pork, chicken). I chose salmon while hubby chose prawns. You will also choose 2 sidings and a sauce. I chose mashed potatoes for my salmon, seasoned with lemon butter sauce and veggies. 
The salmon is cooked the way I want it to be, not dry, just pink enough. The veggies are crisp, too!

Hubby chose prawns with Cebuano sauce (chili infused vinegar) and plain rice. I find this very Filipino. Though we find the prawns a little overcooked.

For dessert, we chose Pineapple Butterscotch (sorry, I am not really sure if this is its name.) It is a serving of chewy butterscotch with glazed pineapples, caramel and white chocolate cigar.

After our sumptuous seafood dinner at The Cove, we checked out some desserts at the Allegro Restaurant and Bar which coincidentally is hosting the themed dinner “Fisherman’s Village”, so we were also able to watch the Tahitian dancers.
We wanted to order some booze but since our baby is with us, we decided to just grab some sweets. We ordered three kinds of desserts: A fruit-infused creme brulee, a chocolate cake and another chocolate piece with ice cream.
Passion Fruit Coconut Creme Brulee is not like your ordinary creme brulee (or burnt creme, almost similar to leche flan). This one is served on a coconut shell and infused with passion fruit. The berry-like taste of passion fruit perfectly balances the creamy texture of the creme brulee. Love the plating, too!

Allegro’s version of the classic Moist Chocolate Cake is heaven on a plate. It’s a combination of chocolate, coffee and dulce de leche.  And when the label says it’s moist, it means it.

My followers know for sure that I love choco lava cakes ala mode, so when I saw the Sunken Chocolate with Coffee Ice Cream, I know for a fact that this is going to be my favorite of the three. And I was not wrong. Though the sunken chocolate cake was not as chewy as Purple Oven’s, the coffee ice cream made the difference. Plus, it is topped with pecans!

I would also like to share a glimpse of Allegro’s posh Filipiniana-inspired bar. 
I also checked out the buffet spread and saw these yummy Baked Oysters. I was so tempted to grab some! This will go perfectly with a glass of wine.

A Filipiniana Feast at the Allegro Restaurant and Bar, Maribago Bluewater

The long scenic drive from Sumilon Island made us crave for nothing else but -RICE. So after we checked in at the Amuma Spa Suites in Maribago Bluewater, we immediately checked out the Allegro Restaurant and Bar.
When we asked the staff what their bestseller is, she promptly said Adobo Rice. Bingo! Exactly what we need. Carbo-loading anyone? We ordered two servings of Adobo Rice, a bowl of Pochero and lastly, Pinaputok na Tilapia.

To our surprise, the serving of Adobo Rice is huge! I think it is good for two people. Adobo Rice includes a generous serving of fried rice with adobo flakes and sauce topped with adobong Cebu. 
Adobo is the name of a popular dish and cooking process in Philippine cuisine that involves meat or seafood marinated in a sauce of vinegar and garlic, browned in oil, and simmered in the marinade. 
Allegro’s rendition of Adobo includes crispy cuts of pork atop mouth-watering fried rice. 
Pochero, Php 450
Allegro’s Pochero, or beef shank in ginger broth with potato, corn and cabbage, is a perfect starter that gives warmth to the craving stomach. The beef is so tender while leaving the veggies crisp. The soup is comforting, nonetheless. Akisha enjoyed her Pochero among all the food that we ordered.

Pinaputok na tilapia, or fried banana leaf-wrapped tilapia stuffed with tomatoes and onions, is light yet flavorful. The fish is so tender and fresh. It goes well with Adobo Rice.
Allegro’s Homemade Ice Cream (Christmas Collection)
A perfect ending to our Filipiniana feast are three scoops of Allegro’s homemade ice cream. This comes from their Christmas Collection – clockwise: Buko Pandan, Halo-Halo and Queso de  Bola. Of the three, I love Queso de Bola!
So when we were already full, it’s time to hit the beach again!
